The chayote is a green pear-shaped fruit, also known by its ‘vegetable pear’ name. It’s related to the cucumber and pumpkin family and is often used in stews and salads. The outside is smooth, or can feel quite prickly, with four constricted folds. The flesh is light green to white and crunchy and seems similar to the taste of a cucumber.


The chayote is ripe when the exterior turns a beautiful green. The chayote can be kept in the fridge for a few weeks. Cut the chayote through the centre via the folds and peel the fruit. The large soft seed is edible and doesn’t need to be removed. The chayote can be eaten raw (providing it’s been peeled) and can also be boiled, baked, steamed or fried.
